ideas, please


I am rounding the 7 week mark. The prospect of childbirth gets scarier and scarier the closer it comes. I have been counting down for a few weeks now, instead of counting up to 40. Yikes! That means it is close. Anyways, the reason for this post is I am hoping (we'll see what actually happens) to get some good freezer meals made in the next couple of weeks to help out once Baby Stone arrives. I am the master of Frozen Lasagna and Frozen Chicken Enchiladas. I hope to increase my frozen meal repertoire with your help; what do you suggest?

When Cohen was coming, I made freezer meals, too. And lasagne and enchiladas were on my list! Hmmm...taco soup freezes well, so does corn chowder. Actually, most soups do. What else...Shepherd's Pie? I'll keep thinking. I'm interested to hear what other people have to say!

I make a blended soup of potatoes, carrots and onions (known in our family as orange soup), so easy to make, freeze and eat. Mashed potatoes and rice both freeze nicely and heat up in a few minutes in the freezer. Great on those days to have with meatloaf or left overs. I freeze tuna casseroles (though I haven't taken it out yet, so I'm not sure!). Chili, pizza pockets. The others have listed some I had.

Frankly, just try to find a ride to SK from Calgary and then beg from your Dear Mother and MIL.
Also, who really likes the taste of freezer meals, in particular casseroles?
Why not just get a few roasts and veggies to throw in the slow cooker and then eat off it for a few days at a time? Or chicken and veggie recipes? (I don't know any offhand.)
Remember, you're going to try to bribe Auntie Lella to come and wait on you hand and foot and chase after kids. She makes really good Mac&Cheese.

Chicken quesadillas. so easy, so good. cut up chicken, green & red peppers & some green onions. Mix all of that in a bowl. Smear refried beans on the tortilla and then scoop some of the mixture onto the tortilla, sprinkle with cheese (buy a bag of grated tex-mex) and then wrap in tin foil. DONE.
Seriously easy and seriously good. You'll love them.
I am happy to make you some!
Chicken pot pies are good too. Costco has some.

Some of the meals I had in the freezer, along with lasagna...
pizza
perogies (homemade)
stuffed manicotti
shepherds pie
beef enchiladas
mixes pre-made to throw in crockpot(like calico beans, chili etc)
quiche
hamburger soup
chicken broccoli cheese casserole
and baked goods like muffins for a quick snack for the kids and me.

Come to think of it, why are you even bothering? Josh will be your slave. (Just have plenty of root beer and chips on hand for bribes.)

No offense to any of you, but my melancholy heart cries out--frozen casseroles, pre-made frozen dinners, ALAS!! I am fortune's fool! I think we should eat at friend's houses--the Bell's (i think they make good tacos), the King's (burger, that is), I have a friend named Earl, we could eat at his house, and Ron McDonald's of course. Or if you're really lucky, I can attempt a meal or two, and I promise it won't be Korean or breakfast. Whatever we do, let's not freezer ziploc us boys to this awful fate!! (although I do like my lasagna)

I have about 3 killer soup recipes, all of which are wonderful and freeze super well. Let me know if you're interested.

Thanks for all your comments! Please excuse my husband for his lack of respect to the frozen meal/casserole. They aren't bad, Dear, and none of them will be named after roadkill!!

Alas! ... What kind of fate is this?! ..... Josh and I agree yet again?!!!
Mind you, I have to wonder if he is planning on robbing a bank...

Just fry up hamburger, onions, and peppers and you can make a million meals from the freezer in a jiff.

get the book, "the big cook" i made about 12 meals in 4 hrs to freeze, and my husband hates freezer food as well, and he never knew they were

Totally with Liam on this one.... Love "The Big Cook"! But don't make too much of any one recipe at once till you know which ones you like..... Seriously, some are much better than others! I too, had a less than enthusiastic husband in regards to the whole matter, but after a while, he has come around and even did the last one with me! What an awesome guy.... though I think I'll stick to doing it with my sister from now on! Somehow it was a little less stressful for me that way! And stick to the REAL lasagne. Did NOT like their Lazy Man's version.
